The story follows the quest of the young knight, Perceval, as he seeks out the Fisher King. He encounters a besieged castle (Chateau de Beaurepaire) commanded by a beautiful lady (Blanchefleur). Perceval falls in love with Blanchefleur after which he challenges the besieging knight to single combat, is victorious, liberates the castle and later marries Blanchefleur de Beaurepaire. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eA great inspiration for one of our premium wines, and as the translation of Blanchefleur means White Flower we thought it appropriate for a White of Whites sparkling. The fruit was 100% de-stemmed \u0026amp; very gently pressed to retain premium free-run juice (the cuvée). Primary fermentation at 15 degrees was conducted in the tank using native (“wild”) yeasts, delivering beautiful primary fruit characters. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe wine undergoes a full malolactic fermentation to produce excellent mouthfeel \u0026amp; richness. The search for this ended in Rylstone, and it’s taken 25 years of establishing the vineyard, developing our wine style and gaining confidence before we were happy to produce a reserve Pinot Noir. It has an exceptionally long hang time on the vines from Veraison at the end of January\/early February through to vintage in April and sometimes May. This leads to early tannin polymerisation (maturation) on the vine rather than awaiting bottle aging, producing softer, silky tannins normally seen in older cabernets. Victor is made in stellar vintages. Despite the flavour intensity, it is a structured and elegant wine. Long and soft tannins. There is none of the often-herbaceous character of this variety in our wines (nor in our other cabernets). It is a wine that ages exceedingly well with the first Victor (2004) still demonstrating bold fruit flavours and good acidity.
